- 4 chicken breasts (boneless and skinless

- 1 cup all-purpose flour (for dredging)
- 2 large eggs
- 2 cups panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 4 tablespoons olive oil
- 4 sub rolls (split lengthwise)
- 1 cup marinara sauce (plus more for dipping)
- 8 slices mozzarella cheese
- ¼ cup Parmesan cheese (grated)
- fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt and pepper on both sides.
- Dredge each chicken breast in flour, shaking off the excess.
- Dip each floured chicken breast into the beaten eggs, then coat them with panko breadcrumbs mixed with garlic powder, onion powder, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat. Cook the chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the cooked chicken to a baking sheet. Top each piece with marinara sauce, mozzarella cheese, and a sprinkle of Parmesan.
- Bake in the preheated oven for 15-20 minutes or until the cheese is melted and bubbly.
- While baking, toast the sub rolls in the oven for a few minutes until warm.
- Assemble the subs by placing a cheesy chicken breast into each toasted roll, topping with additional marinara sauce and fresh parsley.
- Serve immediately with extra marinara sauce on the side for dipping.
Notes
For added flavor, you can include sautéed mushrooms or spinach before adding the chicken to the sub rolls.
