  • 3 skinless boneless chicken breasts can be frozen
  • 1 large onion diced
  • 1 large potato peeled and diced (Yukon Gold or Russet)
  • 10.5 ounces cream of chicken soup 1 can
  • 10.5 ounces cream of mushroom soup 1 can
  • 1 cup chicken broth
  • 1/2 teaspoon poultry seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 Tablespoon fresh parsley
  • 16 ounces frozen mixed vegetables
  • 1 can baked biscuits homemade or refrigerated (8 count canned biscuits)

Instructions

  1. Place the frozen chicken breasts at the bottom of the Crock Pot.
  2. Add the diced onion, diced potato, cream of chicken soup, cream of mushroom soup, chicken broth, poultry seasoning, salt, pepper, and fresh parsley on top of the chicken.
  3. Stir in the frozen mixed vegetables.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and tender.
  5. Once cooked, shred the chicken with two forks and mix well with the other ingredients.
  6. About 30 minutes before serving, cut the biscuits into quarters and place them on top of the mixture in the Crock Pot.
  7. Cover and cook on high for an additional 30 minutes, until the biscuits are golden and cooked through.
  8. Serve warm and enjoy your homemade Chicken Pot Pie!

Notes

For a creamier texture, feel free to add a splash of milk or cream to the mixture. You can also customize the vegetables to your liking.
