- 2 pounds Chicken Thighs
- boneless
- skinless and cut into roughly 2 inch pieces
- ¼ cup Soy Sauce
- low sodium
- ¼ cup Coconut Milk
- unsweetened
- 2 tablespoons Brown Sugar
- 2 Garlic Cloves
- grated or minced
- ½ teaspoon Turmeric
- ½ teaspoon Ginger Powder
- ½ teaspoon Salt
- ½ teaspoon Coriander
- ¼ teaspoon Crushed Red Pepper
Instructions
- In a large bowl, combine soy sauce, coconut milk, brown sugar, grated garlic, turmeric, ginger powder, salt, coriander, and crushed red pepper. Mix well.
- Add the chicken thighs to the marinade and toss to coat. Let it marinate for at least 30 minutes, or up to 4 hours in the refrigerator for best flavor.
- Preheat your grill or oven to medium-high heat. If using an oven, preheat to 400°F.
- Thread the marinated chicken pieces onto skewers if grilling. Otherwise, place them on a baking tray if using an oven.
- Cook the chicken for about 10-15 minutes on the grill or 20-30 minutes in the oven, turning halfway through until cooked through and slightly charred.
- Serve hot with peanut sauce and enjoy!
Notes
For extra flavor, serve with a side of jasmine rice and fresh cucumber slices. You can also adjust the amount of crushed red pepper to suit your heat preference.
