Ingredients

  • 2 pounds Chicken Thighs
  • boneless
  • skinless and cut into roughly 2 inch pieces
  • ¼ cup Soy Sauce
  • low sodium
  • ¼ cup Coconut Milk
  • unsweetened
  • 2 tablespoons Brown Sugar
  • 2 Garlic Cloves
  • grated or minced
  • ½ teaspoon Turmeric
  • ½ teaspoon Ginger Powder
  • ½ teaspoon Salt
  • ½ teaspoon Coriander
  • ¼ teaspoon Crushed Red Pepper

Instructions

  1. In a large bowl, combine soy sauce, coconut milk, brown sugar, grated garlic, turmeric, ginger powder, salt, coriander, and crushed red pepper. Mix well.
  2. Add the chicken thighs to the marinade and toss to coat. Let it marinate for at least 30 minutes, or up to 4 hours in the refrigerator for best flavor.
  3. Preheat your grill or oven to medium-high heat. If using an oven, preheat to 400°F.
  4. Thread the marinated chicken pieces onto skewers if grilling. Otherwise, place them on a baking tray if using an oven.
  5. Cook the chicken for about 10-15 minutes on the grill or 20-30 minutes in the oven, turning halfway through until cooked through and slightly charred.
  6. Serve hot with peanut sauce and enjoy!

Notes

For extra flavor, serve with a side of jasmine rice and fresh cucumber slices. You can also adjust the amount of crushed red pepper to suit your heat preference.
