Ingredients

1 kg / 2 lb chicken thigh fillets

1 large garlic clove minced

1 tbsp ground coriander

1 tbsp ground cumin

1 tbsp ground cardamom

1 tsp ground cayenne pepper

2 tsp smoked paprika

2 tsp salt

Black pepper

2 tbsp lemon juice

3 tbsp olive oil

1 cup Greek yoghurt

1 clove garlic crushed

1 tsp cumin

Squeeze of lemon juice

Salt and pepper

45 flatbreads

Sliced lettuce

Tomato slices

Red onion finely sliced

Cheese shredded

Hot sauce of choice


Instructions

  • In a bowl, combine garlic, ground coriander, ground cumin, ground cardamom, cayenne pepper, smoked paprika, salt, black pepper, lemon juice, and olive oil to create the marinade.
  • Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour or overnight for best results.
  • Preheat your grill or oven to high heat. Grill or bake the marinated chicken for about 20-30 minutes or until cooked through, turning halfway to ensure even cooking.
  • While the chicken is cooking, mix together Greek yoghurt, crushed garlic, cumin, lemon juice, salt, and pepper in a small bowl to prepare the yoghurt sauce.
  • Once the chicken is cooked, let it rest for a few minutes before slicing it thinly.
  • To serve, place the sliced chicken in flatbreads and top with sliced lettuce, tomatoes, red onion, cheese if using, and a drizzle of hot sauce. Add the yoghurt sauce for extra creaminess.

Notes

For a milder version, reduce the cayenne pepper. Allow the chicken to marinate for longer to deepen the flavors. Serve with a side of pickles for added tang.
