- 3–4 boneless
- skinless
- chicken breasts (about 2 lbs)
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp garlic powder
- 1 medium zucchini
- 1 medium yellow squash
- 1/2 medium sweet yellow onion
- 1/2 cup pesto
- prepared
- 4 oz parmesan cheese
- 4 oz mozzarella
Instructions
- Preheat the oven to 375°F (190°C).
- In a baking dish, lay the chicken breasts and season them with salt, pepper, and garlic powder.
- Slice the zucchini, yellow squash, and onion and place them on top of the chicken.
- Spread the pesto evenly over the vegetables and chicken.
- Sprinkle the parmesan and mozzarella cheese over the top.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
You can substitute the chicken with turkey for a different flavor. Feel free to add more vegetables like bell peppers or spinach.
