Description

This Chicken Zucchini Casserole is a delightful, healthy dish packed with flavor from tender chicken, fresh veggies, and creamy cheeses. Perfect for a weeknight dinner!


Ingredients

  • skinless
  • chicken breasts (about 2 lbs)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder
  • 1 medium zucchini
  • 1 medium yellow squash
  • 1/2 medium sweet yellow onion
  • 1/2 cup pesto
  • prepared
  • 4 oz parmesan cheese
  • 4 oz mozzarella

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, lay the chicken breasts and season them with salt, pepper, and garlic powder.
  3. Slice the zucchini, yellow squash, and onion and place them on top of the chicken.
  4. Spread the pesto evenly over the vegetables and chicken.
  5. Sprinkle the parmesan and mozzarella cheese over the top.
  6. Cover the dish with aluminum foil and bake for 25 minutes.
  7. Remove the foil and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
  8. Let it cool for a few minutes before serving.

Notes

You can substitute the chicken with turkey for a different flavor. Feel free to add more vegetables like bell peppers or spinach.
