Description

This Chicken Zucchini Stir Fry is a quick and delicious dish, featuring marinated chicken thighs and tender zucchini, perfect for a weeknight dinner.


Ingredients

  • 1 lb boneless chicken thigh
  • cut bite sized
  • 1 teaspoon cornstarch
  • 1/4 cup light soy sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons sugar (or honey)
  • 1 tablespoon rice apple vinegar (optional)
  • 3 cloves garlic
  • smashed
  • 1 tablespoon cooking oil
  • 1 medium zucchini
  • cut in half lengthwise and then sliced
  • 1 tablespoon oyster sauce
  • Ground black pepper
  • optional

Instructions

  1. In a bowl, combine the chicken, cornstarch, soy sauce, sesame oil, sugar (or honey), and rice apple vinegar. Mix well and let marinate for at least 15 minutes.
  2. Heat the cooking oil in a large pan over medium-high heat. Add the smashed garlic and stir-fry for about 30 seconds until fragrant.
  3. Add the marinated chicken to the pan and stir-fry until cooked through, about 5-7 minutes.
  4. Add the sliced zucchini and oyster sauce, stir-frying for another 3-5 minutes until the zucchini is tender yet crisp.
  5. Season with ground black pepper, if desired, and serve hot.

Notes

For a spicy kick, consider adding red pepper flakes to the stir fry. You can also substitute chicken thigh with breast if preferred.
