This Chicken Zucchini Stir Fry is a quick and delicious dish, featuring marinated chicken thighs and tender zucchini, perfect for a weeknight dinner.

- 1 lb boneless chicken thigh
- cut bite sized
- 1 teaspoon cornstarch
- 1/4 cup light soy sauce
- 1 teaspoon sesame oil
- 2 teaspoons sugar (or honey)
- 1 tablespoon rice apple vinegar (optional)
- 3 cloves garlic
- smashed
- 1 tablespoon cooking oil
- 1 medium zucchini
- cut in half lengthwise and then sliced
- 1 tablespoon oyster sauce
- Ground black pepper

Instructions
- In a bowl, combine the chicken, cornstarch, soy sauce, sesame oil, sugar (or honey), and rice apple vinegar. Mix well and let marinate for at least 15 minutes.
- Heat the cooking oil in a large pan over medium-high heat. Add the smashed garlic and stir-fry for about 30 seconds until fragrant.
- Add the marinated chicken to the pan and stir-fry until cooked through, about 5-7 minutes.
- Add the sliced zucchini and oyster sauce, stir-frying for another 3-5 minutes until the zucchini is tender yet crisp.
- Season with ground black pepper, if desired, and serve hot.
Notes
For a spicy kick, consider adding red pepper flakes to the stir fry. You can also substitute chicken thigh with breast if preferred.
