- ¾ cup finely chopped white onion
- ½ cup finely chopped red bell pepper
- 4 cloves garlic

- 2 teaspoons dried oregano
- 1 teaspoon ground coriander
- 1 (14 ounce) can diced tomatoes
- ¼ cup water
- 8 ounces tortilla chips
- 2 cups shredded cheese
- such as Cheddar or pepper Jack
Instructions
- In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add chopped onion, red bell pepper, and garlic to the skillet. Sauté for about 5 minutes until vegetables are soft.
- Stir in chili powder, cumin, oregano, and coriander. Cook for an additional minute.
- Add diced tomatoes and water. Simmer for 10 minutes until the mixture thickens.
- Preheat your oven to 350°F (175°C). Spread tortilla chips on a baking sheet.
- Spoon the beef mixture over the chips, then sprinkle generously with shredded cheese.
- Bake for 10-15 minutes until the cheese is melted and bubbly.
