  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup cold water or vegetable broth
  • for thinning
  • Small diced cucumber cubes (optional)
  • Extra yogurt or sour cream drizzle (optional)
  • Fresh dill sprigs (optional)
  • Cracked black pepper (optional)
  • Thin cucumber ribbons (optional)

Instructions

  1. In a blender, combine the chopped cucumbers, Greek yogurt, sour cream, minced garlic, fresh dill, lemon juice, olive oil, salt, and black pepper.
  2. Blend until smooth. If the soup is too thick, add cold water or vegetable broth to reach your desired consistency.
  3. Chill the soup in the refrigerator for at least 30 minutes before serving.
