- 1/4 teaspoon black pepper
- 1/2 cup cold water (as needed)
- 1 small jalapeño

Instructions
- In a blender, combine the diced mangoes, cucumber, red bell pepper, red onion, garlic, lime juice, olive oil, salt, and black pepper.
- Blend until smooth, adding cold water as needed to reach desired consistency.
- Taste and adjust seasoning; add jalapeño for heat if desired.
- Chill the soup in the refrigerator for at least 30 minutes.
- Serve chilled, garnished with fresh cilantro or mint.
Notes
For a smoother texture, strain the gazpacho through a fine sieve after blending. Adjust lime juice and seasoning to taste.
