Description

  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cold water (as needed)
  • 1 small jalapeño
  • seeded (optional)
  • Fresh cilantro or mint for garnish (optional)

Instructions

  1. In a blender, combine the diced mangoes, cucumber, red bell pepper, red onion, garlic, lime juice, olive oil, salt, and black pepper.
  2. Blend until smooth, adding cold water as needed to reach desired consistency.
  3. Taste and adjust seasoning; add jalapeño for heat if desired.
  4. Chill the soup in the refrigerator for at least 30 minutes.
  5. Serve chilled, garnished with fresh cilantro or mint.

Notes

For a smoother texture, strain the gazpacho through a fine sieve after blending. Adjust lime juice and seasoning to taste.
