- 6–8 mint leaves
- 1 cup whole milk
- 2/3 cup plain Greek yogurt
- either 2% or whole milk
- 1/4 cup orange juice
- 3 tbsp maple syrup
- 1/2 tsp ground cinnamon
- 1 tbsp vanilla extract
- 1/2 tsp kosher salt
- 1/4 tsp fresh ground black pepper
Instructions
- In a blender, combine the strawberries, mint leaves, whole milk, Greek yogurt, orange juice, maple syrup, ground cinnamon, vanilla extract, kosher salt, and black pepper.
- Blend until smooth and creamy. Taste and adjust sweetness if necessary.
- Chill the soup in the refrigerator for at least 30 minutes before serving.
- Serve in bowls, garnished with chopped strawberries, thinly sliced mint leaves, a swirl of heavy cream or warmed yogurt, and a dash of black pepper if desired.
