  • 8 oz (225g) dark chocolate

  • 2 large eggs
  • 1 tsp vanilla extract
  • 3/4 cup (95g) all‑purpose flour
  • 1/4 cup (25g) cocoa powder
  • 1/4 tsp salt
  • 1 cup (240ml) heavy cream
  • chilled
  • 4 oz (115g) dark chocolate
  • melted
  • 2 tbsp powdered sugar
  • 1 tsp lemon zest (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a saucepan over low heat, melt the unsalted butter and chopped dark chocolate together, stirring until smooth.
  3. Remove from heat and stir in the granulated sugar and maple syrup until well combined.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Sift together the all-purpose flour, cocoa powder, and salt, then fold them into the chocolate mixture until just combined.
  6. Pour the brownie batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes or until a toothpick comes out with a few moist crumbs.
  7. While the brownies cool, prepare the chocolate mousse by whipping the chilled heavy cream in a mixing bowl until soft peaks form.
  8. In another bowl, mix the melted dark chocolate with powdered sugar and lemon zest until smooth, then gently fold in the whipped cream until fully combined.
  9. Once the brownies are completely cooled, spread the chocolate mousse over the top and refrigerate for at least 2 hours before serving.
