- 1 cup mini chocolate chips (optional)
- 1 1/2 cup sugar or xylitol for sugar free
- 1 cup shredded zucchini (160g)
- 1/2 cup oil or almond butter
- 1 1/2 tbsp pure vanilla extract
- 1 cup water
Instructions
- Preheat your oven to 350°F (175°C) and grease a cake pan.
- In a large bowl, mix together the flour, cocoa powder, baking soda, and salt.
- In another bowl, combine the sugar or xylitol with the oil or almond butter, vanilla extract, and water. Mix well.
- Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the shredded zucchini and mini chocolate chips, if using.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
