  • 1 cup mini chocolate chips (optional)

  • 1 cup shredded zucchini (160g)
  • 1/2 cup oil or almond butter
  • 1 1/2 tbsp pure vanilla extract
  • 1 cup water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, mix together the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, combine the sugar or xylitol with the oil or almond butter, vanilla extract, and water. Mix well.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the shredded zucchini and mini chocolate chips, if using.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
