Description

These Chocolate Zucchini Cookies are a delicious way to sneak some veggies into your dessert, offering rich chocolate flavor combined with moistness from zucchini.


Ingredients

  • 6 tbsp Butter
  • Melted
  • 3/4 cup Brown Sugar
  • 1 Egg
  • 1 tsp Vanilla
  • 1 cup Grated Zucchini
  • 1 cup Chocolate Chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, combine the melted butter and brown sugar until smooth, then add the egg and vanilla, mixing well.
  4. Stir in the grated zucchini and then gradually add the dry ingredients until just combined.
  5. Fold in the chocolate chips.
  6. Drop spoonfuls of the dough onto the prepared baking sheet and bake for 10-12 minutes.
  7. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

For extra moisture, ensure that the zucchini is grated finely and pressed to remove excess liquid if desired.
