- 1/3 cup Cocoa Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 6 tbsp Butter
- Melted
- 3/4 cup Brown Sugar
- 1 Egg
- 1 tsp Vanilla
- 1 cup Grated Zucchini
- 1 cup Chocolate Chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix together the flour, cocoa powder, baking soda, and salt.
- In another bowl, combine the melted butter and brown sugar until smooth, then add the egg and vanilla, mixing well.
- Stir in the grated zucchini and then gradually add the dry ingredients until just combined.
- Fold in the chocolate chips.
- Drop spoonfuls of the dough onto the prepared baking sheet and bake for 10-12 minutes.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For extra moisture, ensure that the zucchini is grated finely and pressed to remove excess liquid if desired.
