Instructions

  2. In a separate bowl, combine the flour, salt, black pepper, paprika, garlic powder, onion powder, cayenne pepper, and dried thyme.
  3. Remove each piece of chicken from the buttermilk mixture, allowing excess to drip off.
  4. Dredge the chicken thoroughly in the seasoned flour, pressing the coating onto the chicken for a crispier crust.
  5. Heat about 2 inches of vegetable oil in a deep skillet or Dutch oven to 350°F (175°C).
  6. Carefully add the chicken in batches, making sure not to overcrowd the pan.
  7. Fry until golden brown and cooked through, turning occasionally. Depending on the size of the pieces, this usually takes about 12–18 minutes.
  8. Transfer the fried chicken to a wire rack or paper towel-lined plate to drain excess oil.
