- 1 pint Open Nature Ice Cream
- 4 small tortillas street taco sized
- 2 tbsp butter melted
- 4 tbsp sugar
- 1 tsp cinnamon
- 5 ounces semi sweet chocolate chips
- 1 tbsp coconut oil
- 2 tbsp Sprinkles for topping
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking sheet.
- Melt the butter and brush it onto both sides of the tortillas.
- In a small bowl, mix together the sugar and cinnamon. Sprinkle this mixture generously over the buttered tortillas.
- Shape the tortillas into taco shells and place them on the baking sheet.
- Bake for 8-10 minutes, or until the edges are golden brown and crispy. Remove from the oven and let cool.
- While the tortillas cool, melt the chocolate chips and coconut oil together in the microwave or over a double boiler until smooth.
- Scoop the ice cream into the cooled taco shells.
- Drizzle the melted chocolate over the ice cream-filled tacos.
- Top with sprinkles and serve immediately while the tacos are crisp and the ice cream is cold.
