Description
This Classic Lemon Meringue Pie with a Flaky Homemade Crust is a delightful dessert that perfectly balances tangy lemon filling with sweet, fluffy meringue, all atop a buttery, flaky crust.
Ingredients
Scale
- 5 large egg yolks
- 1 and 1/3 cups (320ml) water
- 1 cup (200g) granulated sugar
- 1/3 cup (38g) cornstarch
- 1/4 teaspoon salt
- 1/2 cup (120ml) fresh lemon juice
- 1 Tablespoon lemon zest
- 2 Tablespoons (28g) unsalted butter
Instructions
- In a saucepan, whisk together the water, sugar, cornstarch, and salt over medium heat until the mixture thickens.
- Remove from heat and stir in the lemon juice, lemon zest, and butter, mixing until smooth.
- In a separate bowl, whisk the egg yolks and gradually add some of the hot lemon mixture to temper them, then stir back into the saucepan.
- Cook the filling briefly until set, then pour into a cooled, baked pie crust.
- Prepare the meringue with the egg whites and top the pie with it, spreading to the edges to seal.
- Bake the pie in a preheated oven until the meringue is lightly browned.
Notes
- Use fresh lemon juice for the brightest flavor.
- Make sure the meringue touches the crust all around to help prevent shrinking and weeping.
- Temper the egg yolks slowly to avoid scrambling them.
- For food safety, ensure the egg-based filling and meringue are thoroughly cooked.
- Refrigerate leftovers, loosely covered, and enjoy within 2–3 days.
