- 1 large egg or ¼ cup applesauce
- granulated sugar
- light brown sugar or dark brown sugar
- canola oil
- vanilla extract
- salt
- baking soda
- baking powder
- all purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the granulated sugar, brown sugar, and canola oil. Mix until well blended.
- Add in the egg (or applesauce) and vanilla extract, and mix until smooth.
- In another bowl, whisk together the flour, baking soda, baking powder, and salt. Carefully mix the dry ingredients into the wet ingredients until just combined.
- Fold in the pumpkin puree and chocolate chips until evenly distributed throughout the dough.
- Drop spoonfuls of the dough onto the prepared baking sheet, leaving space in between.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For an extra kick of spice, feel free to add a pinch of nutmeg, cloves, or ginger into the mix.
