Description

These Classic Stuffed Peppers are a colorful and delicious meal option, packed with flavor and nutrients, perfect for any occasion.


Ingredients

  • 46 bell peppers use any color – green
  • yellow
  • red
  • orange
  • 1 tablespoon olive oil
  • 1 lb ground beef 450g – you can also use ground turkey
  • chicken
  • pork
  • sausage
  • tofu
  • or other similar
  • 1 medium onion chopped
  • 1 jalapeno pepper chopped (optional
  • for spicy)
  • 5 cloves garlic chopped
  • 14.5 ounces fire roasted tomatoes (canned – or use diced tomatoes or tomato sauce)
  • 1 cup shredded cheese cheddar
  • mozzarella
  • or a blend – I LOVE pepperjack for myself
  • 1 tablespoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup cooked rice white
  • brown
  • or wild rice
  • For Garnish. Fresh chopped parsley
  • red pepper flakes

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
  4. Add the ground beef (or chosen substitute) and cook until browned.
  5. Stir in the chopped jalapeno, garlic, fire roasted tomatoes, paprika, oregano, basil, cooked rice, salt, and pepper. Cook until everything is well combined and heated through.
  6. Remove from heat, then stir in 1/2 cup of cheese.
  7. Stuff each bell pepper with the meat and rice mixture, then place them upright in a baking dish.
  8. Top each pepper with the remaining cheese.
  9. Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  10. Garnish with fresh parsley and red pepper flakes before serving.

Notes

Feel free to customize the spices and ingredients based on your personal preferences. These peppers can be made ahead of time and stored in the refrigerator before baking.
