Ingredients

  • 1 cup unsalted butter

  • 4 large eggs

  • 1 teaspoon coconut extract
  • 1 cup coconut milk
  • 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese
  • softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 cup sweetened shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla and coconut extracts.
  5. Gradually add the flour mixture to the butter mixture, alternating with the coconut milk. Mix until just combined.
  6. Divide the batter evenly between the prepared cake pans and smooth the tops.
  7. Bake in the preheated oven for 25–30 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  8. For the frosting, beat together the heavy whipping cream, softened cream cheese, powdered sugar, vanilla extract, and coconut extract until stiff peaks form.
  9. Once the cakes are completely cooled, spread frosting between the layers and over the top and sides of the cake.
  10. Top with the sweetened shredded coconut. Serve and enjoy!

Notes

For a lighter texture, make sure all ingredients are at room temperature before starting. You can toast the coconut for added flavor.
