- 1/2 teaspoon salt
- 1 cup unsalted butter

- 1 cup coconut milk
- 1 1/2 cups heavy whipping cream

- 1 cup sweetened shredded coconut
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a bowl, whisk together the flour, baking powder, and salt.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla and coconut extracts.
- Gradually add the flour mixture to the butter mixture, alternating with the coconut milk. Mix until just combined.
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake in the preheated oven for 25–30 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- For the frosting, beat together the heavy whipping cream, softened cream cheese, powdered sugar, vanilla extract, and coconut extract until stiff peaks form.
- Once the cakes are completely cooled, spread frosting between the layers and over the top and sides of the cake.
- Top with the sweetened shredded coconut. Serve and enjoy!
Notes
For a lighter texture, make sure all ingredients are at room temperature before starting. You can toast the coconut for added flavor.
