- 1 tablespoon butter
- 1/2 cup shallots (finely diced)
- 2 cloves garlic (minced)
- 1/2 cup white wine
- 2 cups seafood stock
- 2 pounds Yukon gold potatoes (or Russet or red potatoes
- cut into 1-inch cubes)
- 1 teaspoon dried thyme
- salt
- pepper
- 1 1/2 cups heavy cream
- 1 1/2 pounds cod fish (cut into 2-inch pieces)
Instructions
- In a large pot, melt the butter over medium heat. Add the shallots and garlic, and sauté until softened, about 3-4 minutes.
- Pour in the white wine and let it simmer for 2-3 minutes, allowing the alcohol to evaporate.
- Add the seafood stock, potatoes, dried thyme, salt, and pepper. Bring to a boil, then reduce heat and let it simmer until the potatoes are tender, about 15-20 minutes.
- Stir in the heavy cream and return to a gentle simmer. Add the cod pieces and cook for an additional 5-7 minutes, until the fish is cooked through and flakes easily.
- Taste and adjust seasoning if necessary. Serve hot and enjoy!
Notes
For a heartier chowder, add corn or carrots. Seafood stock can be homemade or store-bought; use fish stock for extra flavor.
