- 2 cups buttermilk
- 2 large eggs
- 1/2 cup mini chocolate chips
- 2 cups powdered sugar
- 2 tablespoons of buttermilk

Instructions
- In a large bowl, melt 1 tablespoon of butter and let it cool slightly.
- Add flour, baking powder, powdered sugar, instant espresso powder, and salt to the bowl and whisk to combine.
- In another bowl, mix buttermilk and eggs together, then gradually add to the dry ingredients.
- Combine until just mixed, then fold in mini chocolate chips.
- Heat a skillet over medium heat and melt the remaining butter.
- Pour batter onto the skillet for each pancake, cooking until bubbles form. Flip and cook until golden brown.
- For the glaze, whisk together powdered sugar, instant espresso powder, and enough buttermilk to reach a pourable consistency.
- Serve pancakes drizzled with the espresso glaze.
Notes
Feel free to adjust the amount of espresso powder to your taste, and top with your favorite fruits or additional chocolate chips.
