  • 2 tablespoons powdered sugar
  • 2 tablespoons instant espresso powder
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs
  • 1/2 cup mini chocolate chips
  • 2 cups powdered sugar
  • 2 tablespoons of buttermilk
  • as needed
  • 1 tablespoon instant espresso powder

Instructions

  1. In a large bowl, melt 1 tablespoon of butter and let it cool slightly.
  2. Add flour, baking powder, powdered sugar, instant espresso powder, and salt to the bowl and whisk to combine.
  3. In another bowl, mix buttermilk and eggs together, then gradually add to the dry ingredients.
  4. Combine until just mixed, then fold in mini chocolate chips.
  5. Heat a skillet over medium heat and melt the remaining butter.
  6. Pour batter onto the skillet for each pancake, cooking until bubbles form. Flip and cook until golden brown.
  7. For the glaze, whisk together powdered sugar, instant espresso powder, and enough buttermilk to reach a pourable consistency.
  8. Serve pancakes drizzled with the espresso glaze.

Notes

Feel free to adjust the amount of espresso powder to your taste, and top with your favorite fruits or additional chocolate chips.
