- 2 tablespoons butter

- 2 teaspoons baking powder
- 2 tablespoons powdered sugar
- 2 tablespoons instant espresso powder
- 1/2 teaspoon salt
- 2 cups buttermilk
- 2 large eggs
- 1/2 cup mini chocolate chips
- 2 cups powdered sugar
- 2 tablespoons of buttermilk

- 1 tablespoon instant espresso powder
Instructions
- In a large mixing bowl, melt 1 tablespoon of butter and let it cool. Add the flour, baking powder, powdered sugar, instant espresso powder, and salt. Whisk together.
- In another bowl, combine the buttermilk and eggs, then add to the dry ingredients, stirring until just combined.
- Fold in the mini chocolate chips.
- Heat a non-stick skillet over medium heat and add remaining tablespoon of butter. Pour in batter to form pancakes and cook until bubbles form on the surface, about 3-4 minutes.
- Flip and cook for another 3-4 minutes until golden brown. Repeat with remaining batter.
- To make the espresso glaze, whisk together powdered sugar, buttermilk, and instant espresso powder until smooth. Drizzle over pancakes before serving.
Notes
For extra flavor, consider adding a dash of vanilla extract to the batter. Serve with maple syrup for a delightful twist.
