These Copycat Starbucks Pumpkin Cream Cheese Muffins are the perfect fall treat, blending moist pumpkin muffins with a rich cream cheese filling.

- 1/2 cup sour cream
- 1/4 cup (53 g.) packed light brown sugar

- 1 1/2 tsp. pure vanilla extract
- 1 cup (120 g.) all-purpose flour
- 1 Tbsp. pumpkin pie spice
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. ground nutmeg
- 1/2 tsp. kosher salt
- 1/4 tsp. ground ginger
- 1 large egg
- 1 (8-oz.) pkg. cream cheese
- softened
- 1/4 cup (50 g.) granulated sugar
- 1 tsp. pure vanilla extract
- 1/2 tsp. kosher salt
- 1/4 cup coarsely chopped raw pepitas
- Demerara sugar
- for sprinkling
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the egg, pumpkin puree, sour cream, brown sugar, granulated sugar, oil, and vanilla extract until smooth.
- In another bowl, combine the flour, pumpkin pie spice, baking powder, baking soda, nutmeg, salt, and ginger.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- In a separate bowl, mix together the cream cheese, egg, granulated sugar, vanilla extract, and salt until creamy.
- Spoon a layer of muffin batter into each muffin cup, followed by a dollop of the cream cheese mixture, then top with more muffin batter to cover.
- Sprinkle the tops with coarsely chopped pepitas and a bit of demerara sugar.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean. Allow to cool before serving.
Notes
For extra flavor, add a pinch of cinnamon to the cream cheese filling.
