Description

These Copycat Starbucks Pumpkin Cream Cheese Muffins are the perfect fall treat, blending moist pumpkin muffins with a rich cream cheese filling.


Ingredients

  • 1/2 (15-oz.) can pumpkin puree (about 7 Tbsp.)
  • 1/2 cup sour cream
  • 1/4 cup (53 g.) packed light brown sugar
  • 1/4 cup (50 g.) granulated sugar
  • 1/4 cup neutral oil
  • 1 1/2 tsp. pure vanilla extract
  • 1 cup (120 g.) all-purpose flour
  • 1 Tbsp. pumpkin pie spice
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. kosher salt
  • 1/4 tsp. ground ginger
  • 1 large egg
  • 1 (8-oz.) pkg. cream cheese
  • softened
  • 1/4 cup (50 g.) granulated sugar
  • 1 tsp. pure vanilla extract
  • 1/2 tsp. kosher salt
  • 1/4 cup coarsely chopped raw pepitas
  • Demerara sugar
  • for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the egg, pumpkin puree, sour cream, brown sugar, granulated sugar, oil, and vanilla extract until smooth.
  3. In another bowl, combine the flour, pumpkin pie spice, baking powder, baking soda, nutmeg, salt, and ginger.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. In a separate bowl, mix together the cream cheese, egg, granulated sugar, vanilla extract, and salt until creamy.
  6. Spoon a layer of muffin batter into each muffin cup, followed by a dollop of the cream cheese mixture, then top with more muffin batter to cover.
  7. Sprinkle the tops with coarsely chopped pepitas and a bit of demerara sugar.
  8. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Allow to cool before serving.

Notes

For extra flavor, add a pinch of cinnamon to the cream cheese filling.
