Ingredients

  • 1 cup milk
  • 2 cloves garlic
  • minced
  • ½ cup grated Parmesan cheese
  • 1 teaspoon arrowroot powder
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 12 oz gluten free pasta

Instructions

  1. Cook the gluten-free pasta according to package instructions until al dente.
  2. In a blender, combine the cottage cheese, milk, minced garlic, Parmesan cheese, arrowroot powder, Italian seasoning, salt, and black pepper. Blend until smooth.
  3. Pour the sauce into a saucepan and heat over medium-low, stirring until thickened, about 5 minutes.
  4. Toss the cooked pasta with the Alfredo sauce until well coated.
  5. Serve immediately, garnished with additional Parmesan cheese if desired.

Notes

For a dairy-free version, use almond milk and skip the Parmesan or replace it with a dairy-free cheese alternative.
