Ingredients

- 1 cup cottage cheese
- 1 cup milk
- 2 cloves garlic
- minced
- ½ cup grated Parmesan cheese
- 1 teaspoon arrowroot powder
- ½ teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 12 oz gluten free pasta
Instructions
- Cook the gluten-free pasta according to package instructions until al dente.
- In a blender, combine the cottage cheese, milk, minced garlic, Parmesan cheese, arrowroot powder, Italian seasoning, salt, and black pepper. Blend until smooth.
- Pour the sauce into a saucepan and heat over medium-low, stirring until thickened, about 5 minutes.
- Toss the cooked pasta with the Alfredo sauce until well coated.
- Serve immediately, garnished with additional Parmesan cheese if desired.
Notes
For a dairy-free version, use almond milk and skip the Parmesan or replace it with a dairy-free cheese alternative.
