Description

Cottage Cheese Flatbread is a quick, protein-rich flatbread made with cottage cheese and eggs. Seasoned with garlic, onion powder, and oregano, it cooks in minutes and works perfectly as a snack, wrap, pizza base, or side dish.

Ingredients

Scale
  • 1/2 cup full-fat cottage cheese
  • 2 large eggs
  • 1/2 teaspoon garlic powder, optional
  • 1/2 teaspoon onion powder, optional
  • Dried oregano, for garnish

Instructions

  1. Add the cottage cheese and eggs to a mixing bowl.
  2. Whisk or blend until the mixture is well combined and mostly smooth.
  3. Stir in the garlic powder and onion powder, if using.
  4. Heat a non-stick skillet over medium heat.
  5. Pour the cottage cheese mixture into the skillet and spread it evenly into a flat layer.
  6. Cook for 2–3 minutes, or until the edges begin to set and turn lightly golden.
  7. Carefully flip the flatbread and cook for another 2–3 minutes, until cooked through and lightly golden.
  8. Transfer to a plate and sprinkle with dried oregano.
  9. Serve warm with your favorite dips, vegetables, spreads, or toppings.

Notes

  • Use full-fat cottage cheese for a richer flavor and softer texture.
  • Blend the cottage cheese and eggs for a smoother flatbread.
  • Add herbs such as dill, parsley, chives, or basil for extra flavor.
  • For a spicy version, add cayenne pepper or red pepper flakes.
  • For a sweet version, add a little honey and vanilla and serve with fresh fruit.
  • Top with marinara, mozzarella, vegetables, or other pizza toppings for a quick flatbread pizza.
  • Store cooled flatbread pieces in an airtight container in the refrigerator for 3–4 days.
  • Separate pieces with parchment paper before refrigerating or freezing.
  • Freeze individual portions in a freezer-safe bag or container and thaw before reheating.
