Ingredients

  • 1 cup cottage cheese (full-fat or low-fat)
  • 2 large eggs
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup pure honey (or maple syrup
  • adjust to taste)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional Mix-ins: 1/4 cup chocolate chips or chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a blender or food processor, combine the cottage cheese, eggs, cocoa powder, honey (or maple syrup), vanilla extract, baking powder, and salt. Blend until smooth.
  3. If desired, fold in the chocolate chips or walnuts.
  4. Pour the batter into the prepared baking dish and smooth the top.
  5. Bake for 30 minutes or until a toothpick inserted comes out mostly clean. Let cool before slicing.
