Description
These Cottage Cheese Muffins are moist, fluffy, protein-packed muffins made with cottage cheese, eggs, flour, and baking powder. They can be prepared sweet or savory and customized with ingredients such as spinach, chocolate chips, bananas, berries, or herbs.
Ingredients
Scale
- 1 cup cottage cheese
- 2 large eggs
- 1 cup all-purpose flour, whole wheat flour, or almond flour
- ¼ cup honey or maple syrup, for sweet muffins
- 1 tsp baking powder
- ½ tsp salt
- Optional mix-ins: spinach, chocolate chips, banana slices, blueberries, nuts, or shredded cheese
Instructions
- Preheat the oven to 350°F (175°C). Line a standard 12-cup muffin tin with liners or lightly grease it.
- Blend the cottage cheese in a blender or food processor until smooth.
- Whisk the eggs in a mixing bowl until slightly frothy, then mix in the blended cottage cheese.
- In a separate bowl, combine the flour, baking powder, and salt. For sweet muffins, add the honey or maple syrup.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix.
- Fold in your chosen mix-ins, such as spinach, chocolate chips, banana slices, or blueberries.
- Divide the batter evenly among the muffin cups, filling each about three-quarters full.
- Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for a few minutes, then transfer the muffins to a wire rack to cool completely.
Notes
- Blend the cottage cheese for a smoother, more uniform muffin texture.
- Avoid overmixing the batter, as this can make the muffins dense.
- Use fresh baking powder for the best rise.
- For gluten-free muffins, use certified gluten-free flour, oat flour, or almond flour.
- For keto-friendly muffins, use almond or coconut flour and savory mix-ins such as spinach, chives, or cheddar.
- Store at room temperature for 1–2 days or refrigerate in an airtight container for up to 5 days.
- Muffins can be frozen individually for up to 3 months and reheated in the microwave for 20–30 seconds.
