Description
A protein-packed twist on the classic breakfast, this cottage cheese omelette combines the creamy texture of cottage cheese with fluffy eggs and fresh spinach. It’s a quick, satisfying, and nutritious meal that is easily customizable with your favorite veggies, herbs, or extra proteins.
Ingredients
2 to 3 large eggs
1/4 to 1/2 cup cottage cheese (low-fat or full-fat)
1 cup fresh spinach (or other leafy greens)
1 tsp olive oil
Pinch of salt (to taste)
Dash of freshly ground black pepper (to taste)
Optional add-ins: Diced tomatoes, onions, mushrooms, fresh herbs (parsley, basil, chives)
Instructions
Whisk the Eggs: Crack the eggs into a bowl. Season with salt and pepper, then whisk thoroughly until the yolks and whites are fully combined and frothy.
Sauté the Spinach: Heat 1 tsp of olive oil in a non-stick skillet over medium-low heat. Add the fresh spinach and cook for 1–2 minutes until wilted.
Cook the Omelette Base: Pour the beaten eggs into the skillet, tilting the pan so they cover the bottom evenly. Cook undisturbed for about 2 minutes until the edges set. Gently lift the edges with a spatula, allowing any uncooked egg to run underneath.
Add the Cottage Cheese: Once the top is mostly set but still soft, spoon the cottage cheese and wilted spinach onto one half of the omelette. Let it warm through for 1 minute.
Fold and Serve: Gently fold the empty half of the omelette over the filling. Slide onto a plate, garnish with fresh herbs if desired, and serve immediately.
Notes
Low and Slow: Cook over medium to low heat so the eggs remain soft and creamy without turning rubbery.
Avoid Excess Moisture: If using high-water vegetables like mushrooms, tomatoes, or onions, cook them thoroughly beforehand.
Keto/Low-Carb Modification: Use full-fat cottage cheese and skip any added milk or starchy sides.
Storage & Reheating: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a non-stick skillet over low heat with a splash of water, covered, to keep the eggs tender.
