Ingredients

  • Ground beef
  • Mirepoux
  • Potatoes
  • Tomatoes
  • Corn
  • Broth
  • Spices
  • Beans

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat if necessary.
  2. Add the mirepoix (onion, celery, and carrots) to the pot and sauté until softened, about 5 minutes.
  3. Stir in diced potatoes, tomatoes with juice, corn, and beans of your choice.
  4. Pour in the broth and add the spices (smoked paprika, chili powder, salt, and Italian seasoning). Bring to a boil.
  5. Reduce heat, cover, and let simmer for about 30 minutes or until potatoes are tender.
  6. Taste and adjust seasoning as needed before serving hot.
