Ingredients
- 100% wild rice

Instructions
- Begin by rinsing the wild rice under cold water and then cook it according to package instructions, usually simmering in water until tender.
- In a large pot, heat some oil over medium heat and sauté the onion, garlic, and other chopped autumn veggies until softened.
- Add the cooked rice, vegetable stock or chicken stock, Old Bay seasoning, bay leaf, and seasoning to taste. Bring to a simmer.
- Stir in the coconut milk or cream sauce and let the soup simmer for an additional 10 minutes.
