- 4 pieces bone-in chicken breasts or thighs
- skin removed if desired
- 2 large sweet potatoes peeled and sliced into thin rounds
- 3 cloves garlic minced
- 1 tablespoon fresh sage chopped
- 1 cup heavy cream for the sauce
- 1 cup shredded cheese cheddar or mozzarella
- 2 tablespoons olive oil
- to taste salt and pepper for seasoning
Instructions
- Preheat your oven to 375°F (190°C).
- In a large casserole dish, drizzle olive oil and arrange the sweet potato rounds at the bottom.
- Layer the bone-in chicken on top of the sweet potatoes.
- In a bowl, combine minced garlic, chopped sage, heavy cream, salt, and pepper. Pour this mixture over the chicken and sweet potatoes.
- Sprinkle shredded cheese over the top.
- Cover the casserole dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
