This creamy baked feta pasta is a delightful blend of tangy feta cheese and sweet cherry tomatoes, creating a rich and flavorful sauce that’s perfect for any pasta lover.


Ingredients

  • 8 ounces block feta cheese
  • 2 pints cherry tomatoes
  • ¼ cup olive oil
  • 5 cloves garlic

  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 12 ounces penne
  • rotini
  • or bowtie pasta
  • 1 tablespoon salt for pasta water
  • ¼ cup fresh basil
  • chopped
  • 2 tablespoons fresh parsley
  • chopped
  • 1 tablespoon lemon juice
  • Grilled chicken
  • Sautéed shrimp
  • Spinach
  • Kale
  • Roasted zucchini
  • Roasted bell peppers

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, combine the feta cheese, cherry tomatoes, olive oil, minced garlic, dried oregano, dried basil, black pepper, and red pepper flakes (if using).
  3. Bake in the preheated oven for 30 minutes, or until the tomatoes are blistered and the feta is soft.
  4. Meanwhile, cook the pasta according to package instructions in salted water until al dente. Reserve ½ cup of the pasta water before draining.
  5. Once the feta mixture is done baking, remove it from the oven and use a fork to mash the feta and mix it with the tomatoes.
  6. Add the drained pasta to the baking dish, along with the reserved pasta water, fresh basil, parsley, and lemon juice. Stir until well combined.
  7. Serve warm, and feel free to add optional grilled chicken, sautéed shrimp, or your favorite vegetables.
