- 12 oz Italian sausage casings removed (I used 3 sausage links)
- 1 tablespoon olive oil
- 10 oz potato gnocchi
- 1 cup heavy cream
- ½ cup chicken broth
- 1 cup butternut squash puree
- 3 cloves garlic minced
- 2 tablespoons fresh sage chopped
- 2 tablespoons fresh thyme
- salt and coarsely ground black pepper to taste
Instructions
- In a large skillet over medium heat, add the olive oil and sauté the Italian sausage until browned, breaking it apart as it cooks.
- Once the sausage is cooked through, add the minced garlic, fresh sage, and thyme, and sauté for another minute until fragrant.
- Stir in the butternut squash puree, chicken broth, and heavy cream. Bring to a simmer and cook for about 5 minutes until slightly thickened.
- In a separate pot, cook the potato gnocchi according to package directions until they float to the top, then drain.
- Add the cooked gnocchi to the sauce, gently tossing to coat. Season with salt and freshly cracked black pepper to taste.
- Serve warm, garnished with additional sage if desired.
Notes
For a vegetarian option, substitute sausage with plant-based sausage or mushrooms.
