- 1 (8 oz) pkg. Neufchatel cheese
- softened slightly (light cream cheese)
- 1/2 cup packed light brown sugar
- 2 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1 (8 oz) pkg. light sour cream
- 1 tsp vanilla extract
- 4 lbs crisp
- sweet apples
- chilled (I used a combo of Gala
- Jazz and Golden Delicious)
- 2 cups cold water
- for soaking apples
- 2 Tbsp fresh lemon juice
- for soaking apples
- 1 cup chopped Fishers Walnuts
- 3/4 cup dried cranberries
Instructions
- In a mixing bowl, combine the softened Neufchatel cheese, light brown sugar, ground cinnamon, ground nutmeg, light sour cream, and vanilla extract until smooth and creamy.
- In a large bowl, mix cold water with fresh lemon juice. Cut the apples into bite-sized pieces and soak them in the lemon water for about 10 minutes to prevent browning.
- Drain the apples and gently pat them dry with a paper towel. Add the apples to the cheese mixture and fold gently until well coated.
- Stir in chopped walnuts and dried cranberries, mixing together until evenly distributed.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
Notes
For a twist, try adding different fruits, such as pears or grapes, to enhance the flavor and texture of the salad.
