This Creamy Corn Soup is a delightful blend of sweet corn, rich cream, and hearty potatoes, making it the perfect comforting dish.

- 3 tablespoons butter
- 1 large yellow potato peeled
- diced; approximately 9-10 ounces whole or 1 ½ cups diced
- ½ cup chopped onion white or yellow
- 3 cloves garlic minced
- 3 cups low-sodium chicken broth
- 5 cups corn kernels divided
- 1 cup heavy cream at room temperature
- 1–2 tablespoons fresh lime juice juice from approximately 1 medium lime
- salt to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the diced potato, chopped onion, and minced garlic. Sauté for about 5-7 minutes until the vegetables start to soften.
- Pour in the chicken broth and bring to a boil. Reduce heat and simmer for about 15 minutes until the potatoes are tender.
- Stir in 4 cups of corn kernels and continue to simmer for an additional 5 minutes.
- Using an immersion blender, puree the soup until smooth. If you prefer a chunky texture, blend only half of the soup.
- Return the pot to the heat and stir in the heavy cream. Heat through without boiling.
- Add lime juice and season with salt to taste. Serve hot, garnished with the remaining corn kernels.
Notes
Feel free to adjust the amount of lime juice according to your taste. You can also add other seasonings or herbs for added flavor.
