  • 1 bay leaf

  • Salt, to taste

  • Black pepper, to taste

  • 1 tbsp fresh lemon juice


Instructions

  • In a large pot, melt the butter over medium heat.

  • Add the shallot and leeks, sautéing for 4–5 minutes until soft and fragrant.

  • Stir in the garlic, carrots, and potatoes; cook for 2–3 minutes.

  • Sprinkle the flour over the vegetables and stir well to coat.

  • Gradually pour in the stock, stirring to prevent lumps. Add the bay leaf and bring to a gentle simmer.

  • Cook for 12–15 minutes, or until the potatoes are fork-tender.

  • Add the salmon chunks and cook for about 5 minutes, until just opaque.

  • Stir in the heavy cream and fresh dill.

  • Season with salt, black pepper, and lemon juice. Remove the bay leaf.

  • Serve warm with crusty bread or a light salad.
