- 1 ½ cups diced Hatch chiles

- 1 pound elbow macaroni
- 1/2 cup unsalted butter
- 3 cloves garlic
- grated
- 1 teaspoon dried Mexican oregano
- 1/4 cup all-purpose flour
- 2 1/4 cups whole milk
- slightly warmed
- 8 ounces cream cheese
- room temp
- 2 cups shredded pepper jack cheese
- 1 cup shredded sharp cheddar cheese
- 1/2 cup shredded smoked Gouda cheese
- 1 teaspoon ground mustard
- Kosher salt to taste
Instructions
- Preheat your oven to 350°F (175°C) and grease a 3-quart baking dish.
- In a large pot, cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.
- In the same pot, melt the butter over medium heat. Add the grated garlic and Mexican oregano, sautéing until fragrant, about 1 minute.
- Whisk in the flour and cook for 1-2 minutes until lightly golden.
- Gradually whisk in the warmed milk until smooth, then cook until the mixture thickens, about 5 minutes.
- Reduce the heat to low, then stir in the cream cheese until melted and smooth.
- Add the pepper jack cheese, sharp cheddar cheese, smoked Gouda, ground mustard, and the roasted Hatch chiles, stirring until the cheeses melt and the mixture is creamy.
- Fold in the cooked macaroni and season with kosher salt to taste.
- Transfer the mixture to the prepared baking dish and spread evenly. Bake for 25-30 minutes, or until bubbly and golden on top.

Notes
For an extra kick, add more chiles or a sprinkle of cayenne pepper. You can also use different cheese combinations based on your preference.
