  • 1 pound elbow macaroni
  • 1/2 cup unsalted butter
  • 3 cloves garlic
  • grated
  • 1 teaspoon dried Mexican oregano
  • 1/4 cup all-purpose flour
  • 2 1/4 cups whole milk
  • slightly warmed
  • 8 ounces cream cheese
  • room temp
  • 2 cups shredded pepper jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded smoked Gouda cheese
  • 1 teaspoon ground mustard
  • Kosher salt to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 3-quart baking dish.
  2. In a large pot, cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.
  3. In the same pot, melt the butter over medium heat. Add the grated garlic and Mexican oregano, sautéing until fragrant, about 1 minute.
  4. Whisk in the flour and cook for 1-2 minutes until lightly golden.
  5. Gradually whisk in the warmed milk until smooth, then cook until the mixture thickens, about 5 minutes.
  6. Reduce the heat to low, then stir in the cream cheese until melted and smooth.
  7. Add the pepper jack cheese, sharp cheddar cheese, smoked Gouda, ground mustard, and the roasted Hatch chiles, stirring until the cheeses melt and the mixture is creamy.
  8. Fold in the cooked macaroni and season with kosher salt to taste.
  9. Transfer the mixture to the prepared baking dish and spread evenly. Bake for 25-30 minutes, or until bubbly and golden on top.

Notes
