- 1 cup whole milk ricotta cheese
- 1 lemon
- zested and juiced
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic
- minced
- 1/4 cup reserved pasta water
- Salt and freshly ground black pepper

- 2 tbsp olive oil
- 1/4 tsp red pepper flakes (optional)
- Fresh basil or parsley
- for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water, then drain the pasta.
- In a large pan, heat olive oil over medium heat. Add minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.
- Stir in the ricotta cheese, lemon zest, and lemon juice. Mix until creamy, adding reserved pasta water gradually to reach desired sauce consistency.
- Add the cooked pasta to the ricotta mixture, tossing to combine. Stir in grated Parmesan cheese and season with salt and pepper to taste.
- Serve immediately, garnished with fresh basil or parsley.
Notes
For an extra zing, add more lemon juice or zest according to your taste preference. This dish pairs well with grilled chicken or shrimp for added protein.
