1 cup pearl couscous
8 ounces mushrooms
sliced
1 medium onion
diced
3 cloves garlic

4 cups vegetable broth
1 cup heavy cream
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper
to taste
Fresh parsley
chopped
Grated Parmesan cheese
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
- Stir in the minced garlic and sliced mushrooms, cooking until the mushrooms are soft, about 5-7 minutes.
- Add the pearl couscous, vegetable broth, dried thyme, and dried rosemary. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the couscous is tender.
- Stir in the heavy cream (or coconut milk) and season with salt and pepper to taste. Heat through for an additional 5 minutes.
- Serve hot, garnished with chopped parsley and grated Parmesan cheese if desired.
Notes
For a lighter version, substitute heavy cream with coconut milk. You can also add cooked chicken or beans for extra protein.
