Ingredients

- 1½ lb thin chicken breasts
- ½ tsp sea salt
- cracked pepper
- garlic powder and paprika
- more or less to preference
- 1½ T olive oil
- 3–4 garlic cloves
- minced
- ⅓ c white wine
- 3 c low sodium chicken broth
- 2 tsp Italian seasoning
- ¼ tsp crushed red pepper
- optional
- 1 1/2 c orzo
- uncooked
- 1 c heavy cream
- 2/3 c parmesan cheese
- grated
- 3 T tomato paste
- 2 handfuls baby spinach
Instructions
- Season the chicken breasts with sea salt, cracked pepper, garlic powder, and paprika.
- In a large skillet, heat olive oil over medium heat and cook the chicken breasts until browned and cooked through, about 6-7 minutes per side. Remove and set aside.
- In the same skillet, add minced garlic and sauté until fragrant.
- Pour in white wine and let it reduce for about 2 minutes.
- Add chicken broth, Italian seasoning, and red pepper to the skillet, bringing it to a simmer.
- Stir in orzo and cook until al dente, about 10 minutes, stirring occasionally.
- Lower the heat and stir in heavy cream, parmesan cheese, and tomato paste until well combined.
- Chop the cooked chicken and return it to the skillet along with baby spinach, stirring until spinach wilts.
- Serve hot and enjoy your creamy orzo with chicken!
Notes
Feel free to adjust the spices according to your taste. This dish can also be made with broth instead of wine for a non-alcoholic option.
