  • 3/4 cup Granulated Sugar
  • 2 cups Heavy Cream
  • 16 oz Mascarpone Cheese
  • 2 tbsp Lemon Juice
  • 1 tsp Vanilla Extract
  • 1/2 tsp Almond Extract
  • 24 pieces Savoiardi Ladyfingers

Instructions

  1. In a saucepan, combine sliced peaches, water, and granulated sugar. Bring to a boil and then simmer for about 10 minutes, until peaches are soft. Remove from heat and let cool.
  2. In a mixing bowl, whip the heavy cream to stiff peaks. In another bowl, blend mascarpone cheese, lemon juice, vanilla extract, and almond extract until smooth.
  3. Gently fold the whipped cream into the mascarpone mixture until fully combined.
  4. Briefly soak each ladyfinger in the peach syrup and layer them in a serving dish.
  5. Spread a layer of the mascarpone filling over the ladyfingers, then repeat the process until all ingredients are used, finishing with a layer of mascarpone.
  6. Chill in the refrigerator for at least 2 hours before serving. Garnish with fresh peach slices if desired.
