- 1/2 tsp Almond Extract
- 24 pieces Savoiardi Ladyfingers
Instructions
- In a saucepan, combine sliced peaches, water, and granulated sugar. Bring to a boil and then simmer for about 10 minutes, until peaches are soft. Remove from heat and let cool.
- In a mixing bowl, whip the heavy cream to stiff peaks. In another bowl, blend mascarpone cheese, lemon juice, vanilla extract, and almond extract until smooth.
- Gently fold the whipped cream into the mascarpone mixture until fully combined.
- Briefly soak each ladyfinger in the peach syrup and layer them in a serving dish.
- Spread a layer of the mascarpone filling over the ladyfingers, then repeat the process until all ingredients are used, finishing with a layer of mascarpone.
- Chill in the refrigerator for at least 2 hours before serving. Garnish with fresh peach slices if desired.
