- 2 cups fresh basil leaves packed
- ½ cup pine nuts
- ½ cup grated pecorino cheese or parmesan
- 1 clove garlic peeled
- 1 teaspoon lemon zest
- ½ cup extra-virgin olive oil
- ¾ – 1 cup heavy cream
- salt and pepper
Instructions
- In a food processor, combine basil leaves, pine nuts, grated cheese, garlic, and lemon zest. Pulse until finely chopped.
- With the processor running, slowly drizzle in the olive oil until well blended.
- Transfer the pesto to a mixing bowl and stir in the heavy cream, mixing until creamy. Season with salt and pepper to taste.
- Serve immediately over pasta or use as a spread for sandwiches.
Notes
For a thicker sauce, reduce the amount of heavy cream. You can also substitute walnuts for pine nuts for a different flavor profile.
