- 2 Honeycrisp or Gala or Sweet Tango apples sliced
- 2 Tbsps Extra virgin olive oil
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground allspice
- 1 tablespoon Extra virgin olive oil
- 1 tablespoon unsalted butter
- 3 garlic cloves minced
- 4 cups vegetable stock organic
- 1 tablespoon raw honey or maple syrup
- 4 Tbsps organic all-purpose flour
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- ½ teaspoon ground cinnamon
- ⅛ teaspoon ground allspice
- 2 cups organic pumpkin puree
- 1 cup organic heavy cream
- 1 cup freshly-grated parmesan cheese

Instructions
- Preheat the oven to 400°F (200°C). Toss the sliced apples with olive oil, cinnamon, nutmeg, and allspice. Spread them on a baking sheet and roast for 20 minutes until tender and caramelized.
- In a large pot, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Whisk in 4 tablespoons of flour and cook for another minute.
- Gradually add 4 cups of vegetable stock, stirring constantly until the mixture thickens.
- Add the honey or maple syrup, sea salt, black pepper, smoked paprika, garlic powder, oregano, basil, thyme, and cinnamon, followed by the roasted apples and pumpkin puree. Stir until well combined.
- Simmer on low heat for 10 minutes, then stir in the heavy cream and parmesan cheese until fully melted.
- Serve hot, topped with homemade croutons.
Notes
For an even creamier texture, blend the soup until smooth before serving. Adjust sweetness with more honey or maple syrup if desired.
