- 2 pints cherry tomatoes
- 2 tablespoons olive oil
- 4 garlic cloves minced
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- 1 cup uncooked orzo pasta
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 8 ounces feta cheese
- ¼ cup Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Fresh basil leaves
- Chopped parsley
- Cracked black pepper
- Parmesan cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a baking dish, combine cherry tomatoes, olive oil, minced garlic, Italian seasoning, salt, and black pepper. Toss until the tomatoes are well coated.
- Roast in the preheated oven for 25-30 minutes, until the tomatoes are soft and caramelized.
- While the tomatoes are roasting, cook the orzo. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the uncooked orzo and sauté for 1-2 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer uncovered for about 8-10 minutes or until the orzo is tender. Drain any excess liquid.
- In a medium bowl, combine feta cheese, Greek yogurt, olive oil, and lemon juice. Whip until creamy and smooth.
- Once the tomatoes are done roasting, mix them into the cooked orzo.
- Serve the orzo topped with the whipped feta and garnish with fresh basil, parsley, cracked black pepper, and parmesan cheese if desired.
Notes
For an extra kick, consider adding red pepper flakes to the roasted tomatoes.
