- 1 Tbsp. extra-virgin olive oil
- 4 (6- to 8-oz.) boneless
- skinless chicken breasts
- Kosher salt
- Freshly ground black pepper
- 1 tsp. dried oregano
- 3 Tbsp. unsalted butter
- 3 garlic cloves

- 1 1/2 cups cherry tomatoes
- halved
- 3 cups baby spinach
- 1/2 cup heavy cream
- 1/2 oz. Parmesan
- finely grated (about 1/4 cup)
- Lemon wedges
- for serving
Instructions
- Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and dried oregano, then add them to the skillet. Cook until browned and cooked through, about 6-7 minutes per side.
- Remove the chicken from the skillet and set aside. In the same skillet, melt the butter. Add the minced garlic and cherry tomatoes, sautéing for about 2-3 minutes until fragrant and the tomatoes begin to soften.
- Add the baby spinach to the skillet and cook until wilted. Pour in the heavy cream and stir to combine. Return the chicken to the skillet and simmer for another 5 minutes, allowing the flavors to meld.
- Stir in the grated Parmesan until melted and the sauce is creamy. Serve warm with lemon wedges on the side.
Notes
Feel free to adjust the amount of garlic and spinach according to your preference. This dish pairs well with rice or pasta.
