- 2 large chicken breasts
- 1/4 teaspoon garlic powder
- Salt & pepper to taste
- Flour for dredging
- 1 tablespoon olive oil
- 3 tablespoons butter divided
- 8 ounces cremini mushrooms sliced
- 1/4 teaspoon Italian seasoning
- 2 cloves garlic minced
- 1/2 cup dry white wine
- 3/4 cup heavy/whipping cream
Instructions
- Season chicken breasts with garlic powder, salt, and pepper. Dredge in flour, shaking off excess.
- In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat. Add chicken and cook until golden brown on both sides, about 6-7 minutes per side. Remove and set aside.
- In the same skillet, add remaining butter. Add sliced mushrooms and Italian seasoning, cooking until the mushrooms are softened, about 5 minutes. Stir in minced garlic and cook for an additional minute.
- Pour in white wine, scraping up any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes until reduced by half.
- Reduce heat to low and stir in heavy cream. Add the cooked chicken back to the skillet, and let it simmer in the sauce for another 5 minutes, or until heated through.
- Serve the creamy white wine mushroom chicken hot, garnished with fresh herbs if desired.
Notes
For added flavor, consider marinating the chicken in white wine and herbs for a few hours before cooking.
