- 3 cups diced zucchini
- 2 medium shallots
- 1 tablespoon minced garlic
- 1 pound long pasta
- ½ cup pasta water
- 1 cup heavy cream
- 20 basil leaves
- 1 teaspoon sea salt
- ½ teaspoon freshly cracked black pepper
- ¾ cup grated Parmesan cheese
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced zucchini and shallots, cooking until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Meanwhile, cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
- Add the cooked pasta to the skillet, along with the reserved pasta water, heavy cream, basil leaves, sea salt, and black pepper. Toss to combine.
- Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning with additional salt and pepper as needed.
- Serve warm, garnished with extra Parmesan and freshly cracked black pepper.
Notes
For a lighter version, you can substitute half of the heavy cream with low-fat yogurt. Adjust seasoning according to your taste.
