Ingredients

  • 3 cups diced zucchini
  • 2 medium shallots
  • 1 tablespoon minced garlic
  • 1 pound long pasta
  • ½ cup pasta water
  • 1 cup heavy cream
  • 20 basil leaves
  • 1 teaspoon sea salt
  • ½ teaspoon freshly cracked black pepper
  • ¾ cup grated Parmesan cheese

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced zucchini and shallots, cooking until softened, about 5-7 minutes.
  2. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Meanwhile, cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  4. Add the cooked pasta to the skillet, along with the reserved pasta water, heavy cream, basil leaves, sea salt, and black pepper. Toss to combine.
  5. Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning with additional salt and pepper as needed.
  6. Serve warm, garnished with extra Parmesan and freshly cracked black pepper.

Notes

For a lighter version, you can substitute half of the heavy cream with low-fat yogurt. Adjust seasoning according to your taste.
