- Juice of 1 lemon
- 1/4 cup sugar
- 1 pint fresh blueberries
- 1 bundle lemon thyme (tied with kitchen twine)
- Flaky sea salt (for finishing)
- 8 slices sourdough bread (1/4-inch thick)
- 4 oz mozzarella cheese

- 4 oz white cheddar

- 4 tbsp butter (I like Kerrygold unsalted butter for this)
Instructions
- In a medium saucepan, combine the lemon juice, sugar, and fresh blueberries. Add the lemon thyme and cook over medium heat, stirring occasionally, until the blueberries break down and the mixture thickens, about 10 minutes. Remove from heat and let it cool.
- Spread a layer of the blueberry mixture on one side of each slice of sourdough bread. On the other side, sprinkle mozzarella and white cheddar cheese.
- Close the sandwiches and heat a skillet over medium heat. Add 1 tbsp of butter to the skillet. Once melted, place the sandwich in the skillet, cheese side up.
- Cook until golden and crispy, about 3-4 minutes, then flip and cook the other side until golden and the cheese is melted, another 3-4 minutes.
- Remove from the skillet, sprinkle with flaky sea salt, and slice in half to serve.
Notes
For a more intense flavor, feel free to let the blueberry spread sit overnight in the fridge. This sandwich can also be enjoyed with a drizzle of honey or a dollop of cream cheese for added creaminess.
