- 2 medium ripe peaches
- peeled and diced
- 2 cups (240g) all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup (170g) unsalted butter
- browned and cooled
- ¾ cup (150g) granulated sugar
- ¼ cup (50g) light brown sugar
- 2 large eggs
- at room temperature
- 1 teaspoon vanilla extract
- ½ cup (120ml) buttermilk (or milk plus 1 teaspoon lemon juice)
- 1 teaspoon cinnamon
- ½ cup (45g) rolled oats
- ½ cup (60g) chopped pecans or walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, mix the browned butter, granulated sugar, and light brown sugar until well combined.
- Add the eggs, vanilla extract, and buttermilk to the butter mixture, whisking until smooth.
- Gradually fold the dry ingredients into the wet ingredients until just combined. Gently fold in the diced peaches, and nuts if using.
- Scoop the batter into the muffin tin, filling each cup about two-thirds full.
- In a small bowl, combine the rolled oats, a bit of brown sugar, and some melted butter to create the streusel topping. Sprinkle it generously over each muffin.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
