  • peeled and diced
  • 2 cups (240g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup (170g) unsalted butter
  • browned and cooled
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) light brown sugar
  • 2 large eggs
  • at room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) buttermilk (or milk plus 1 teaspoon lemon juice)
  • 1 teaspoon cinnamon
  • ½ cup (45g) rolled oats
  • ½ cup (60g) chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix the browned butter, granulated sugar, and light brown sugar until well combined.
  4. Add the eggs, vanilla extract, and buttermilk to the butter mixture, whisking until smooth.
  5. Gradually fold the dry ingredients into the wet ingredients until just combined. Gently fold in the diced peaches, and nuts if using.
  6. Scoop the batter into the muffin tin, filling each cup about two-thirds full.
  7. In a small bowl, combine the rolled oats, a bit of brown sugar, and some melted butter to create the streusel topping. Sprinkle it generously over each muffin.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
