Instructions

  1. Pat the fish fillets completely dry with paper towels and cut them into smaller portions if needed.
  2. For extra flavor and tenderness, optionally soak the fish in buttermilk for 10–15 minutes.
  3. In a shallow bowl, combine the cornmeal, flour, paprika, garlic powder, salt, black pepper, and cayenne pepper. Stir well.
  4. In a separate bowl, whisk together the eggs and milk or buttermilk.
  5. Dip each piece of fish into the egg mixture, coating both sides.
  6. Dredge the fish in the cornmeal mixture, pressing gently so the coating adheres evenly.
  7. Let the coated fish rest for a few minutes so the crust can set.
  8. Heat about 1 inch of oil in a deep skillet or saucepan to 350°F (175°C).
  9. Fry the fish in batches for about 3–4 minutes per side, or until golden brown and cooked through. Avoid overcrowding the pan.
  10. Transfer the cooked fish to a paper towel-lined plate or wire rack to drain excess oil.
